I made these because the whole internet was freaking out about the solar eclipse, and I cheekily called them “Rice Eclipsie Treats” when I posted a picture on Facebook. But that’s not going to me get anywhere with search engine optimization. Plus they wouldn’t be relevant again until 2024, and, frankly, that’s silly ‘cause these are easy and yummy.
As I point out in my first post about this chocolate cake base – you wouldn’t know it was vegan. And that applies to this yummy peanut butter frosting, too.
Okay, so most people would probably call these “Mexican Hot Chocolate” Brownies, but I’ve never been to Mexico. And spicy food reminds me of Austin, so I shall call these what I want, since I adapted this recipe to suit myself.
I don’t think I’ve ever baked cookies that provoked so many immediate, audible reactions (from “oh my God” to “damn, Cate” to even more explicit interjections). These double chocolate buttermilk cookies are that good. And they were sort of accidental.
It might or might not surprise you that I find most frosting kind of gross. Buttercream is normally so packed with powdered sugar, I want to gag. But not this magical mystery fluff!
I made these fabulous intensities of chocolate for the first time a couple months ago but neglected to take pictures. Hence, y’all didn’t hear about it. But I knew just how rich and creamy and chocolatey and amazing they were, so after 30 days of NO SUGAR OF ANY KIND, this is how I wanted to re-enter the world of the living.
