These dulce de leche cookies are fabulous and messy. Kind of like a snickerdoodle with dulce de leche in the middle. Basically awesome and well worth the mess (for special occasions).

Swapping out the standard pecans for hazelnuts and adding some malted milk powder takes this easy blondie recipe from good to great. If you have hazelnuts on hand, then you can make these on a moment’s notice – my favorite kind of recipe!

This cake is best made a day ahead, which makes it a nice option if you’re crunched for time. It’s also pretty straightforward and doesn’t require any obscure ingredients. And it’s dang good.
