Homemade marshmallows are my new obsession. I’ve put off attempting them for years — due to a misguided assumption that making them would be a giant hassle. They’re admittedly a bit fussy, but not at all as bad as I thought.
“I needed to find something to do with all this extra ganache.” That’s how these bars happened. And it seems like a somewhat fitting tagline to my life – a bit of a glimpse into my daily living.
I have a confession: I’m not real big on peanut butter cookies. I’m sure I just haven’t found the right recipe, but they’re usually both too dry and too bland for my taste. Not so with these lovely gooey chocolate chip peanut butter bars!
As I point out in my first post about this chocolate cake base – you wouldn’t know it was vegan. And that applies to this yummy peanut butter frosting, too.
I’m being cutesy with the title because I plan to try these again with almond butter (or cashew butter, or pecan butter…). The base is what matters, and it’s a solid foundation for swirling in some nut-butter goodness.
